easy egg bites



I love making recipes that I don't need to buy ingredients for. Having a couple of "fridge clean-out day" recipes on hand is a great way to use up any leftovers and random vegetables that are buried deep in the crisper drawer. Let's hear it for reduced food waste! Whoo hoo!


This basic (and rather vague) recipe for egg bites is one of my favourite "fridge clean-out day" recipes and I would love to share it with you! While you could easily throw all of these ingredients in an omelette or egg-scramble as well, these little egg bites are super easy to pack for lunch and in my opinion more fun to eat!


I made my egg bites using feta and spinach because they were in my fridge at the time, but the possibilities are endless! Here are some other add-ins that you may have sitting in your fridge that I think would be absolutely delicious!

  • left over chicken, ham or pulled pork (cut into small pieces)

  • grilled peppers, mushrooms or potatoes (cut into small pieces)

  • cottage cheese, cheddar cheese or mozzarella cheese

  • salsa, red pepper jelly, hot sauce or antipasto

Two important words of advice:

  • GREASE YOUR MUFFIN TINS REALLY WELL or use some of those little cupcake cups for easy clean up because I have learned that baked egg is not fun to clean.

  • Leave about a 2 cm space from the top of the tin when filling so you don't have any overflow disasters. I usually place my muffin tin on top of a baking sheet when it goes in the oven just to add an extra layer of protection.
